Professor Mark Mathews van de universiteit van Davos haalt in dit uitstekend leesbare boek een aantal vast gewortelde begrippen -zoals terroir is verantwoordelijk voor de smaak van wijn- en -een lage opbrengst geeft betere wijnen- onderuit.
