I am Italian, from Genova, the major seaport of the Mediterranean Sea and what I am writing regarding Italian cooking is of first hand, coming straight from my family’s tradition and from my heart.My Mom “Zita” and My Grandmother “Nina” taught me all their abilities to cook Italian traditional style since I was a child. In Italy not only housewives but, when many guests are attended, also the strong men cook and I still remember when my “Nonno Pierin” was making kilos of fresh “fetuccine” adding some white wine to the dough, while smiling to me: I will never forget his joyous blue eyes.Today the families’ daily meal tradition is taken away from us, we don’t cook anymore to enjoy our time with our families, and this is a pity: the hours passed all together at the table is the bound between all the components of a family, where the sharing of emotions mix with the taste of the foods.My books are sold worldwide and in order to make them easy to understand, I wrote the text in my humble English and in my own words, this with the purpose to transfer my emotions and my intents to your heart: I want to make you to feel the same love which I feel while cooking. The ingredients are sustaining our lives, I kindly ask you to always respect and love what it is inside your pot. This book is based on my personal opinions and my expertise coming from my family cooking skills. I wrote this book, along with other books about the Italian traditional cooking style, because I want to share the Italian “cucina casalinga” secrets of the culinary art of my family. My family style of cooking is oriented to what is called “alla casalinga” which means home-made by housewives.In my blog you will find recipes and information regarding the Italian “traditional” cooking style, my blog is free and rich in pictures and content, each one of the recipes describes with one commented photo each step of the preparation: you will find it agreeable and useful: www.aldentekitchen.com This is the Black & White version of my book “Cooking Foods – Italian Recipes Secrets – Soffritto” also I published wonderful books about Italian cooking style: “Risotto” and “Menu’ Italiano”.Maurizio Russo / A.D.K.
